Recipe: Mac N Cheese

serves 3-4


Ingredients

  • 1 box (8 oz) pasta (why not try varieties such as lentil pasta, spinach pasta, green pea pasta, buckwheat pasta? There are so many options on the market right now)


cheese sauce

  • 1 tbs butter

  • broccoli florets-rinsed

  • 1 cup milk (or dairy alternative)

  • 1 tbs light cream cheese

  • 150g cheddar -grated

  • 1 cup baby spinach leaves, roughly chopped (can use frozen spinach too)

  • salt and pepper, to taste


method

  • Bring a large pot of water to boil. Cook the pasta according to the instructions on the package.

  • Drain the pasta with 2 tbs of the water remaining.

  • Set aside the pasta.

  • Add the milk, butter, broccoli and chopped baby spinach to the pasta water. Cover the pot and cook over low/medium heat for about 3 minutes.

  • Add the cream cheese and cheddar, stirring constantly until the cheeses have melted.

  • Add the drained pasta and stir everything together until pasta is well-coated with the cheese sauce.

  • Season to taste.



To make this a complete meal, why not add some shredded chicken or seafood.
